Simple Dairy Free Cupcakes

Good morning all! Or greetings for whatever time of day it is with you today! 

We are in full speed mode catering to small events at the moment, especially birthday parties for little ones and I wanted to share with you our simple cupcake recipe because it is so easy and the cupcakes come out perfect every time! This recipe is dairy free but not vegan as we have eggs in there. Organic eggs from our garden may I add! 



So here is the recipe! I’d love to know how you get on trying it! 

This recipe made about 40 cupcakes but you can half the recipe of split into thirds as you wish! 

Recipe 
3 eggs
360g sugar (1.5 cups)
525ml milk (1.8 cups)
360ml veg oil (1.2 cups)
690g plain flour - (4.6 cups)
9tsp baking powder
3 tsp salt

Method
  1. Heat oven to 175 Celsius 
  2. In a mixer beat the eggs for about a minute and then add the vegetable oil and continue for another minute
  3. Now add the milk and sugar and mix until the granules have dissolved. 
  4. Sift in the flour, baking powder and salt and ensure that its mixed well. You may need to scrape the edges down to incorporate everything. You should be left with a thick and creamy batter at this stage.
  5. Now fill your paper cupcake holders two thirds full. These baby’s rise a fair bit so we don’t want them to overflow during the bake! 
  6. Place into the middle of the oven and bake for 25 minutes. When you come to take them out they should be golden in colour and beautiful little mounded cakes! 
  7. Let the cakes cool completely before frosting!

I used buttercream to frost but you can use any type of sweet frosting that you like!!
