Rhubarb and Ginger Cordial (Syrup)




Such a simple recipe and one that will use up a glut of rhubarb in no time. This is such a lovely thing to have in the fridge and is delicious diluted with water, as an addition to cocktails and drinks or even poured over ice-cream.




Ingredients 
3 rhubarb stalks cut into 3cm pieces
1 1/2 pints water
5cm of root ginger thinly sliced
zest and juice of a lemon
1 cup of sugar

Method 
Add all ingredients to a pan and heat slowly to a simmer
Once the rhubarb is falling apart the mixture should be ready
I used muslin to strain mine however putting the mixture into a sieve and leaving it to drip through will work just fine
Pour into a sterilised bottle and pop it into the fridge. This will keep for a moth or two easy!
