Thai green curry paste


This is a recipe that I discovered in Thailand and as good as some shop bought curry pastes can be making your own is a zillion times better


Ingredient's

ground coriander   1 tbs
ground cumin 2 tbs
black pepper 2 tsp.

lemon grass 3 stems (2/3 of the thickest part)
Galangal (or Ginger if you can't find) 2.5 cm
turmeric 2.5 cm
kaffir lime fruit rind 2 zested
kaffir lime leaves 6
shallots 5
garlic cloves 10
large fresh green chilli's 8
green birds eye chilli's 20
coriander leaves 1 large bunch
sweet basil leaves 1 bunch
shrimp paste 2 tsp.
vegetable oil if making in blender 3 tbs



You can either make the paste the old fashioned way with a pestle and mortar, this will be a very time consuming way to make a paste but if you have a few hours to spare and you just want to grind away while you watching TV or something you will make a heavenly paste.




On the other hand you have enough time to spare to actually make the paste, but only just but you need a slightly speedier version, look not further than a food processor. Just put all the ingredients in together along with the additional vegetable oil and blend for about 15 minutes
