The Ultimate Chocolate Cake

I am so excited to share this recipe with you. I've been making chocolate cakes for years and have never found on that I thought tasted as good as the ones you remember from your birthdays as children of from the proper cake shops. Well, I have now! And here is the recipe below...

Ingredients
1 1/2 cups All-purpose flour
2 Eggs
2 sticks Butter, salted
3/4 cup Buttermilk
1/4 cup Greek yogurt, plain
2 tbsp Heavy whipping cream
1 1/2 tsp Baking powder
1 1/2 tsp Baking soda
1 cup Cocoa powder, unsweetened
1 1/2 cups sugar (granulated)
8 oz Milk chocolate
1 1/2 cups Powdered sugar
3/4 cup Coffee, hot black
1 tsp Salt
1 1/2 tbsp Vanilla
1/2 cup Canola oil

Method
1) Preheat the oven to 180 Celsius
2) Using butter, grease your baking tin or tray
3) In your mixer or in a bowl, bet together the eggs, buttermilk, oil, vanilla and greek yoghurt until it is nice and smooth. If you cant buy buttermilk in the shops, please take a look at the link below on how to make it easily at home.

Buttermilk Recipe

4) Now we add the flour, salt, cocoa powder, sugar, baking powder and baking soda. Mix again until nice and smooth
5) Now add the hot coffee and mix well.
6) Bake in the oven on the middle shelf until the top is no longer glossy and the batter doesn't tremble in the centre when wiggled. This should take about 20-30 minutes dependant on the tin you have decided to use.
7) To make the frosting you will need a mixer or very strong arms. Beat the powdered sugar and the butter until it no longer has the grains of sugar through it.
8) Melt the milk chocolate and beat this in with the vanilla.
9) Then add three table spoons of the heavy cream and beat for 4 minutes until nice and fluffy.
10) Wait until the cake is cool before frosting
11) Shave some of chocolate onto the frosting using a grater.

This can be decorated however you like and is really a show stopper in the taste department!

Enjoy!
