Strawberry and Mixed Fruit Smoothie Bowl
My last smoothie bowl went down a treat especially because it was so thick and icy so they ate it as if it was sorbet.
I have decided to incorporate one into the breakfast menu each week which I will be sharing with you.
This week we made a strawberry and passionfruit one which came out delicious
Ingredients
1/2 Cup fresh or frozen strawberries. I find frozen work best as the smoothie becomes thicker.
1/2 Cup of Coconut Yoghurt
1/2 Cup Ice
2 Tbs Shredded Coconut
1 Tbs Pumpkin seeds
Fruit of your choice to decorate
Method
1) Whizz the Strawberries, yoghurt and ice in a blender until smooth and thick. Add more ice if needed too reach the desired consistency. Place into a bowl
2) Sprinkle over the coconut and pumpkin seeds
3) Cut up the fruit that you have chosen and decorate your bowl
