Rhubarb and Blueberry Crumbed loaf
1 cup of buttermilk
1 cup of brown sugar
2/3 cup oil
1 egg
2 1/2 cups of flour
1/2 tsp salt
1 tsp baking soda
1 cup of blueberries, fresh or frozen
1 x cup of chopped Rhubarb
Method
Pre-heat oven to 180 Celsius
1) In a bowl or mixer, mix together the oil, egg, sugar and buttermilk until its combined.
2) sift in the flour and add the salt and baking soda.
3) Fold in the chopped Rhubarb and whole blueberries
4) Pour mixture into a lined loaf tin
5) make the topping by mixing the softened butter with the sugar until it forms a crumbled texture, add this to the loaf and pop into the oven
6) cook for 40 minutes or until done.
7) Enjoy!
