Mothers Day Cake


Mothers Day Cake 

White chocolate and almond cake 

Again you really need an electric whisker to get the best of this cake  

Step 1 

8 eggs 
1 cup sugar 
Crack all the eggs into the mixer and whisk them up with the sugar until the mixture has quadrupled in size and has a pale orange creamy consistency.  

Step 2 

250g butter 
250g white chocolate
Melt the butter and white chocolate together, easiest way to do this is in the microwave, pop  in a bowl cover in cling film and cook for 1 minute 30. If you don’t have a microwave put it in a bowl above some boiling hot water, we don’t want to put it above direct heat for fear of burning the chocolate.  
Slowly add it to the eggy mix 

Step 3 

2 cups corn flower 
1 cup ground almond 
Turn your mixer to level three so its going super slow the add your flower and ground almond 

Step 4

Place some grease proof paper on two baking trays and pour half of the mix on to each.

Step 5 
Bake on a temperature of 180 for 15 minutes, although keep a vague eye on it just in case your oven cooks faster than mine. 

Step 6 

Leave to cool for 30 minutes

Step 7

Draw an M shape on some grease proof paper and cut two matching Ms 

Step 8 

Whip some cream up with some icing sugar when its nearly whipped add 1 teaspoon of lemon juice this will help give it form and add a tablespoon of icing sugar 

Step 9 

assemble the cake, I put some crunched up macaroons on the inside as well to make it more tasty and give it more texture 

Step 10 

Finish the cake as you like,  I used macaroons and real daffodils but you can decorate a cake with your own imagination, if you do your own design you’ll be super proud of yourself
