Gluten free Bannana and walnut pancakes Method


Method 

Add all the dry ingredients to the mixing bowl, and give it a little mix with a fork except the walnuts and banana, (banana’s not really dry anyway)
 
Then add the egg and whisk it a bit 

The add the coconut milk and whisk into a paste

Finally add the chopped walnuts and chopped bananas 

That’s your batter 

Too cook them you will need a frying pan and some vegetable oil. 

Pour a tiny bit of oil into a pan, and wipe it around with kitchen towel so its almost just like a film over the bottom of the pan, heat it to medium heat, so if you have 1 to 10, 10 being hot about 7. 
Drop half tablespoonful portions onto the pan, for me even in a big pan I can only do about 3 at a time as they spread a bit. Cook for about 1 minute either side and serve immediately. I drizzeled mine in maple syrup and served with fruit and extra walnuts, Yum scrum!
