Gluten free Banana and walnut Pancakes, American Style
and there dairy free too.
So you maybe thinking, why make gluten free pancakes. Well my friends even if your not allergic to the dreaded gluten these will be easier on your tummy than the real floury thing. And adding banana and walnut gives them some extra nutritional value, I reckon they would be just as good as a bowl of muesli. So I replaced the flour of normal pancakes with cornflour, rice flour, and potato flour and I replaced the milk with coconut milk.
Here goes the recipe
Ingredients
½ a cup of cornflower
½ a cup rice flour
½ a cup of potato flour
2 teaspoons of baking powder
1 teaspoon bicarbonate of soda
1 table spoon of sugar, you can omit this if your being super healthy
1 egg
1 cup of coconut milk
30g chopped walnuts
2 chopped bananas
