Roasted Sea Bass with Veggies
This is a super easy Roasted Sea Bass recipe with Roasted sweet potatoes and turnips coupled with steamed long stem broccoli
First of all you need to descale and gut your fish, if your not confident enough to do this just ask the fish monger that you get it from, they will be happy to do it for you, that will save you a whole lot of mess and an extra 10 minutes of prep time.
My sea bass was a large one about 2kg and I cooked it on 170 for 40 minutes
Preheat oven to 170 degrees Celsius
Ingredients
1 whole sea bass big enough to feed you family
1 sweet potatoes
v 1 turnip
v 1 onion
v 3 cloves of garlic
v 1 lemon
v 4 or five bay leaves
v 1 bunch of parsley
v Salt and pepper
Method
Step 1
Prepare the fish you need to cut some lines into it from back to bottom as you can see I have done in the photo
Step 2
Prepare your vegetables.
Peel and slice the sweet potato and turnip. Finely slice the onion. Slice the lemons. Crush the bay leaves and garlic, but for this leave in the skin on but crush each clove, that way you get the flavour coming through but the garlic doesn’t burn.
Step 3
Cut a piece of grease proof paper to the size of the baking tray that your using, screw it up and soak it under the tap so its wet and put on the tray
Step 4
Arrange your vegetables in a nice pattern on the tray, cover in a healthy helping of olive oil and place the fish on top. Stuff a few of the veggies inside the fish and season to your liking
Step 5
Place in the oven for 40 minutes and go do something else!
Step 6
Steam your greens just before the fish is ready.
Step 7
Take the fish out of the oven and serve. You can just place it on the table as is, just like the roast chicken on a Sunday or you can portion it up, its up to you.
